Beware: These are healthy cookies! Did you think you would ever hear those two words in one sentence? Well, these cookies really are good for you! They are made of nuts and egg-whites. And they even taste good! The other captain requested them to have after dinner tonight, so I figured  they must be good enough to post. We use the left-over egg yolks the next day in our omeletts.

Nutty Cookies

1 1/4 cup coconuts or almonds, or combination of both (very finely ground)
2 egg whites
1 tsp honey or 5 drops of stevia (more if you like very sweet cookies)
dash of vanilla extractdash of cinnamon

Whip the egg whites, honey, and extract until very stiff. Mix in the nuts until well combined. Roll the dough in your hands and throw it onto a cookie sheet lined with parchment paper. You really need to toss it hard so the balls of “dough” flatten out a bit. This will make them look more like cookies :).

Bake at 275° for 25-30 minutes. They will be light brown on the bottom and won’t fall apart when done.
