Protein Pancakes
Ingredients:
1 cup cottage cheese
2 egg whites
1 egg yolk
1 tbsp flour (soy or other)
Beat the egg whites until until stiff peaks form. In separate bowl, mix egg yolk, cottage cheese and flour. Add the mixture to the egg whites and stir carefully until just combined. Cook just like a regular pancake, on a skillet at low-medium heat, flipping when each side becomes lightly browned. They fall apart quite easily and require a lot of finesse. I tried to cook some of them in my Aroma Oven (an early B-day present – Thanks mom!) and was a little more successful. Low heat and slow cooking is key.
